Plain rice cakes remain a staple in my diet. I have an embarrassing amount of fun coming up with new ways to top them. If you’ve read my previous post about rice cakes, you would know how strongly I feel about my rice cakes, and if you haven’t, then you should read it here.
Below are three more recipes that I’ve been loving.
Hummus and Veggies
The versatility of this one is certain to make it a staple lunch!
Hummus comes in so many different flavours (bonus points if you make your own) and works with just about any veggie!
I like to think of this one as a “grown-up bagel bite”. I topped mine with cheese and mushroom, but, like the hummus and veggies, it is extremely versatile. Try it with shredded cheese, spinach, or for the non-vegetarians, pepperoni!
Who doesn’t love Nutella? This one is the perfect treat, and it tastes great topped with any fruit. I love it with raspberries!
