I love banana bread. I always have an abundance of overripe bananas in my freezer, and it’s the perfect family recipe; it’s great for breakfast, snack and dessert! Personally, I think everyone should have a good banana bread recipe in their back pocket.
I wish I could say, I came up with this recipe. I will be the first to admit that I did not, nor do I think I ever could. Here is the link to the original recipe on the Simply Recipes website.
It is definitely the easiest recipe that I’ve used. The best part about it is that you can add your own extras into it. Blueberries or walnuts are my favourite!
Simply Recipes calls for 2 or 3 ripe bananas and 1/2 a cup to 1 cup of sugar. I like to use three bananas and 1/2 a cup of sugar, however, this is just personally preference. Play around with it!
My loaf pan has gone missing, so I make it in a shallower, wider pan. Based on how I cut the banana bread, it yielded 10 servings.
