Sweet Potato and Black Bean Quesadilla

Quesadillas are so easy to make and, filled with sweet potato and black beans, this one is the perfect lunch for fall time!


  • Mashed sweet potato
  • Black beans
  • Tomato
  • Garlic
  • Cumin
  • Shredded cheese (I didn’t put it in mine, but it would have made it SO much better)


I started by peeling, boiling, and mashing a sweet potato. Then, in a pan on low heat, I fried the black beans, garlic, and diced tomato. I added my spices and mixed in the sweet potato before transferring it onto one half of a wrap on my panini press. If you’re adding shredded cheese, sprinkle it over the mixture before closing the panini press. Now all you have to do is wait for the wrap to get crispy!

If you don’t have a panini press, you can place the wrap in a pan on the stovetop. Using the weight of another pan, you can keep the panini closed. Don’t forget to flip it to get both sides crispy.
