Homemade Pumpkin Spice Latte (Vegan)

I’m surprised that all the Canadian vegans have not petitioned for Starbucks to make it’s pumpkin spice latte vegan-friendly yet. Seriously, c’mon Starbs…

Even though prime PSL season is over, I still like to treat myself to a homemade pumpkin spice latte on lazy mornings. Heck, I will probably be treating myself to these year round; who’s to say pumpkin is only for the fall time?!?

Whether you’re vegan or not, this recipe is super easy and is WAY less expensive than a trip to Starbucks.

Ingredients:

  • Espresso or Dark Roast Coffee
  • 1 TBSP Pumpkin Puree
  • Vanilla Dairy-Free Coffee Creamer (Silk, So Delicious, and Coffee-Mate all offer this)
  • Pumpkin Pie Spice
  • Cinnamon

I like to make my regular morning coffee and leave extra room at the top. Then, I stir in the pumpkin puree. It usually takes about 30 seconds of stirring for it to dissolve into the coffee. Next, I add the creamer and pumpkin pie spice. I give it another stir and sprinkle some cinnamon on top. That’s it! Quick, easy, and so cozy. It might not technically be a latte, but it certainly is not a compromise.
